If you struggle with mushy or bland zucchini, this recipe will change your mind. By sautéing the slices in a hot pan, we get a beautiful caramelized finish that tastes wonderful with crunchy toasted almonds and a little fresh garlic.

My friend Erika shared this idea with me after we enjoyed it during a summer dinner on her back porch. It is light enough for a weeknight meal but special enough to serve when you have guests over. A quick squeeze of lemon juice at the end really brings all the flavors to life.

🧺 Ingredients

  • 2 tablespoons olive oil
  • 3 medium zucchini, sliced into half moons
  • 1/2 small red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

    Heat the olive oil in a large skillet over medium high heat.

    Add the sliced zucchini and red onion to the pan.

    Cook the vegetables for about 8 to 10 minutes, stirring occasionally, until they are golden brown and tender.

    Stir in the almonds and minced garlic, then cook for another 2 minutes until the almonds are toasted and the garlic is fragrant.

    Remove the pan from the heat and stir in the lemon juice.

    Season with salt and pepper to taste and serve warm.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. This dish is excellent served alongside grilled chicken or a bowl of fresh pasta. For an extra boost of flavor, you can sprinkle a little grated parmesan cheese on top just before serving.
