This soup is one of my absolute favorites because it feels like a warm hug in a bowl. It is packed with butternut squash and lentils, making it both filling and full of goodness to help you feel your best.

I love how easy this recipe is to pull together on a busy weeknight. You can let it simmer away on the stove or toss everything into your slow cooker if you need to set it and forget it for a few hours.

🧺 Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup dried red lentils, rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 can full fat coconut milk
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh cilantro for serving

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large pot over medium heat and sauté the onion until soft.

  2. 2

Add the garlic, ginger, curry powder, and turmeric, cooking for about one minute until fragrant.

  3. 3

Stir in the butternut squash cubes, rinsed lentils, and vegetable broth.

  4. 4

Bring the mixture to a boil, then reduce the heat and simmer for 25 to 30 minutes until the squash and lentils are tender.

  5. 5

Stir in the coconut milk and use an immersion blender to lightly pulse the soup if you prefer a creamier texture.

  6. 6

To use a slow cooker, add all ingredients except the cilantro to the insert and cook on low for 6 to 8 hours or high for 3 to 4 hours.

  7. 7

Taste and add salt and pepper as needed before serving with fresh cilantro on top.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to four days. This soup also freezes beautifully, so feel free to save some for a quick lunch later. Serve it with a warm piece of crusty bread for a complete meal.
