There is nothing quite like a warm bowl of soup when the weather starts to turn chilly. This Chicken Wild Rice Soup is a total favorite in my home because it is so hearty and filling, plus it smells amazing while it simmers on the stove.

I love this recipe because you can do all the prep work in advance and toss it in the freezer. When you are ready to eat, just add the broth and let your pot do the work for you.

๐Ÿงบ Ingredients

  • 3 cups mirepoix, which is a mix of chopped celery, carrot, and onion
  • 3 cloves garlic, minced
  • 1 cup uncooked wild rice
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1 pound chicken breasts
  • 1 tablespoon chicken bouillon paste
  • 7 1/2 cups total chicken broth, divided
  • 2 cups heavy cream
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 tablespoons cold water

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Combine the mirepoix, garlic, wild rice, salt, poultry seasoning, chicken breasts, and bouillon paste in a freezer safe bag and freeze.

  2. 2

When ready to cook, place the frozen contents into your pot with 5 cups of chicken broth.

  3. 3

For the Crockpot, cook on low for 8 hours. For the Instant Pot, cook on high for 30 minutes. For the stovetop, simmer for 60 minutes.

  4. 4

Remove the chicken, shred it, and return it to the pot.

  5. 5

Stir in the heavy cream and the remaining 2 1/2 cups of chicken broth.

  6. 6

Whisk the cornstarch and cold water together to make a slurry, add it to the soup, and simmer until it reaches your desired thickness.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. This soup also freezes beautifully after it is cooked if you want to save portions for lunch later in the week.
