I love making this soup when I need to feed a hungry crowd without spending all afternoon in the kitchen. It is a wonderful mix of ground beef and tender potatoes with just a little bit of Southwestern spice to keep things interesting.

The best part is that it uses many items you likely already have in your pantry, like canned beans and corn. It is a great way to stretch your ingredients into a meal that will leave everyone feeling full and happy.

๐Ÿงบ Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 3 carrots, peeled and thinly sliced
  • 2 celery stalks, thinly sliced
  • 2 pounds lean ground beef
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 14 ounces canned diced tomatoes with juice
  • 10 ounces canned tomatoes with green chiles
  • 15 ounces canned chili beans with sauce
  • 15 ounces canned corn, drained
  • 15 ounces canned green beans, drained
  • 3 medium Yukon gold potatoes, cut into small cubes
  • 4 cups beef broth
  • Fresh cilantro or parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large stockpot over medium high heat.

  2. 2

Add the diced onion, carrots, and celery, then cook them until they start to soften.

  3. 3

Stir in the ground beef and cook it until it is browned all the way through, breaking it into small pieces as you go.

  4. 4

Carefully drain off any extra grease from the pot so the soup stays light and clean.

  5. 5

Add the minced garlic, cumin, chili powder, oregano, salt, and pepper, and stir for about a minute until it smells wonderful.

  6. 6

Pour in both cans of tomatoes, the chili beans with their sauce, the drained corn, and the green beans.

  7. 7

Stir in the cubed potatoes and the beef broth.

  8. 8

Bring the pot to a boil, then turn the heat down to low and cover it with a lid.

  9. 9

Let the soup simmer for about 15 to 20 minutes or until the potato pieces are nice and tender.

  10. 10

Give it a final taste to see if it needs more salt or pepper, then serve it hot with a sprinkle of fresh herbs.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to four days. If the soup gets too thick after sitting, just splash in a little extra beef broth when you reheat it. This meal is extra delicious when you serve it with a dollop of sour cream or a handful of shredded cheese on top.
