There is nothing quite like the smell of a homemade chicken pot pie baking in the oven on a chilly evening. It is the ultimate comfort food that brings everyone to the table with big smiles.

My secret to the best pie is making sure your chicken is cooked perfectly before it hits the creamy sauce. If you are in a rush, a high quality rotisserie chicken works wonders for this recipe.

๐Ÿงบ Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and cubed
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 sheets refrigerated pie crust

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Melt the butter in a large skillet over medium heat and cook the onion, carrots, and potatoes until they start to soften.

  3. 3

Stir in the flour and cook for one minute to remove the raw flour taste.

  4. 4

Slowly pour in the chicken broth and heavy cream while stirring constantly until the sauce thickens.

  5. 5

Add the cooked chicken, peas, corn, and thyme, then season with salt and pepper before removing from the heat.

  6. 6

Place one pie crust into the bottom of a pie dish.

  7. 7

Pour the chicken mixture into the crust and cover with the second pie crust, crimping the edges to seal.

  8. 8

Cut a few small slits in the top crust to let steam escape.

  9. 9

Bake for 30 to 40 minutes until the crust is golden brown and the filling is bubbly.

๐Ÿ’ก Tips

Let the pie rest for 10 minutes before slicing so the filling sets. You can store leftovers in an airtight container in the fridge for up to three days.
