My best advice for this recipe is to make sure your vegetable pieces are all cut to a similar size. This helps them cook evenly so you get a perfect bite of tender carrot, potato, and chicken every single time.

  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into chunks
