The combination of fresh basil pesto and melted mozzarella keeps the chicken incredibly tender and juicy. It is a family favorite in my house, especially when paired with a light side salad or some roasted vegetables.

  • 4 boneless skinless chicken breasts, about 2 to 2.5 pounds
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.66 cup refrigerated basil pesto
  • 6 ounces sliced fresh mozzarella cheese
  • 1 cup cherry tomatoes, optional
