Whenever I have a long day ahead, I reach for these quick bites to keep my energy levels steady. They are so easy to pull together in one bowl and don't require any time near the oven, which is a real lifesaver when the kitchen gets too hot.

My biggest tip for these is to keep the mixture in the fridge for about twenty minutes before rolling them into balls. It makes the dough much less sticky and so much easier to handle with your hands.

🧺 Ingredients

  • 1 cup old fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 1/2 cup mini dark chocolate chips
  • 1 teaspoon vanilla extract

    Combine the oats, peanut butter, honey, flaxseed, chocolate chips, and vanilla in a large mixing bowl.

You can store these in the freezer for up to three months if you want to make a double batch ahead of time. If you prefer a different flavor, try swapping the chocolate chips for dried cranberries or shredded coconut.
