There is nothing better than a quick stir fry when you need a healthy dinner on the table in a hurry. This shrimp and broccoli dish is one of my favorite weeknight staples because it tastes just like takeout but comes together in your own kitchen in about thirty minutes.

My secret to getting the texture just right is to cook the shrimp and broccoli separately. By removing the shrimp while the broccoli steams, you ensure the seafood stays perfectly tender instead of turning rubbery. It is a small step that makes a world of difference in the final result.

🧺 Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 head broccoli, cut into florets
  • 2 tablespoons canola oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced and separated into white and green parts
  • 2 tablespoons water
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon cornstarch
  • Optional red pepper flakes to taste

👩‍🍳Instructions

  1. 1

In a small bowl or measuring cup, whisk together the soy sauce, honey, rice vinegar, sesame oil, and cornstarch until smooth.

  2. 2

Heat one tablespoon of oil in a large skillet over medium high heat. Add the shrimp in a single layer and season with salt and pepper. Cook for one to two minutes per side until opaque and curled, then remove the shrimp from the pan and set aside.

  3. 3

Add the remaining tablespoon of oil to the same pan and add the broccoli florets. Cook for two minutes undisturbed to get a nice sear, then stir in the water. Cover the pan and steam for two minutes until the broccoli is bright green and tender.

  4. 4

Add the minced garlic, grated ginger, and the white parts of the green onions to the pan. Sauté for one to two minutes until fragrant.

  5. 5

Give your sauce a quick stir and pour it into the skillet. Add the cooked shrimp back into the pan and toss everything together for one to two minutes until the sauce is glossy and coats everything evenly.

  6. 6

Serve immediately over your favorite rice and garnish with the remaining green onion tops.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to two days. If you prefer a sweeter sauce, feel free to increase the honey to three tablespoons, and always serve this over a bed of fluffy brown rice or quinoa to soak up all that delicious sauce.
