Blueberry Muffin Ice Cream Cake

My best advice is to let your ice cream sit on the counter for about ten minutes before you start. It makes spreading it into your pan much easier and saves you from tearing up the base layer.

- 6 tablespoons unsalted butter, melted
- 1 quart vanilla ice cream, softened
- 1 cup high quality blueberry jam
- 3 store bought blueberry muffins, crumbled

Grease an 8 inch square baking pan or line it with parchment paper for easy removal.

In a medium bowl, mix the graham cracker crumbs and melted butter until the texture feels like wet sand.

Press the crumb mixture firmly into the bottom of your pan to create an even base.

Spread half of the softened vanilla ice cream over the crust in an even layer.

Dollop half of the blueberry jam over the ice cream and gently swirl it in with a knife.
