There is nothing quite like coming home to the smell of a pot roast bubbling away in the oven. This recipe uses apple cider and apple butter to create a sweet and savory sauce that keeps the meat incredibly tender and flavorful.

My favorite part of this meal is how the sweet potatoes soak up all those rich juices while they cook. It is a hearty and comforting dish that always feels like a special Sunday dinner, even when you make it on a busy weeknight.

🧺 Ingredients

  • 3 pounds beef chuck roast
  • 2 cups apple cider
  • 1/2 cup dry white wine
  • 3 tablespoons apple butter
  • 2 large onions, chopped
  • 3 shallots, peeled and halved
  • 4 large carrots, peeled and cut into chunks
  • 4 sprigs fresh thyme
  • 3 large sweet potatoes, peeled and cubed
  • 3 tablespoons butter, melted
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

    Preheat your oven to 325 degrees Fahrenheit.

    Season the beef generously with salt and pepper. Heat the olive oil in a large Dutch oven over medium high heat and brown the roast on all sides until well seared.

    Remove the beef and add the onions, shallots, and carrots to the pot. Cook for a few minutes until they start to soften.

    Stir in the apple cider, white wine, and apple butter. Scrape the bottom of the pot to release any browned bits.

    Return the beef to the pot, add the thyme sprigs, cover tightly, and place in the oven. Braise for two hours.

    While the beef cooks, toss the sweet potato cubes with melted butter, Parmesan, garlic, and sage on a baking sheet.

    After the two hours are up, add the sweet potatoes to the oven alongside the pot roast. Roast everything for another 45 minutes until the beef is fork tender and the potatoes are golden and crispy.

    Remove the pot from the oven, let the meat rest for ten minutes, and serve the roast with the vegetables and pan juices.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you want a thicker gravy, whisk a little cornstarch into the pan juices once the beef is finished and simmer it on the stove for a few minutes before serving.
