Stuffed peppers are a true favorite in my kitchen because they are so comforting and fill the whole house with a wonderful smell. The combination of ground beef and Italian sausage adds so much flavor to the rice and tomato base.

I love making these when I need a meal that satisfies everyone at the table. If you want to save time, you can prep the filling a day early and just stuff and bake them when you are ready to eat.

  • 4 large bell peppers, tops removed and seeded
  • 1 pound ground beef
  • 1/2 pound Italian sausage
  • 1 cup cooked white rice
  • 1 can diced tomatoes, drained
  • 1 cup marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

    Preheat your oven to 375 degrees Fahrenheit.

    Bring a large pot of water to a boil and cook the hollowed peppers for about 5 minutes until slightly softened, then drain them well.

    In a large skillet, brown the ground beef and Italian sausage over medium heat until fully cooked. Drain any excess fat.

    Stir the cooked rice, diced tomatoes, half of the marinara sauce, oregano, and garlic powder into the skillet. Season with salt and pepper.

    Spoon the meat and rice mixture into each pepper and place them upright in a baking dish.

    Pour the remaining marinara sauce over the tops of the peppers.

    Cover the dish with foil and bake for 30 minutes.

    Remove the foil, sprinkle the mozzarella cheese over the tops, and bake for another 10 minutes until the cheese is melted and bubbly.

These keep very well in the fridge for up to three days in an airtight container. If you have leftovers, they taste even better the next day after the flavors have had time to settle. Serve these with a crisp side salad or a piece of crusty bread.
