There is something truly magical about the smell of a chicken roasting in the oven on a slow Sunday afternoon. This meal is a favorite in my house because it brings everyone together around the table without requiring you to spend the whole day stuck in the kitchen.

My best piece of advice is to get your vegetables chopped and ready to go earlier in the day. This way, you can just slide everything into the oven and enjoy your time with family while the house fills with those delicious roasting aromas.

🧺 Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 pounds potatoes, cut into large chunks
  • 4 large carrots, peeled and sliced into thick rounds
  • 1 large yellow onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved

    Preheat your oven to 400 degrees Fahrenheit.

    Pat the chicken dry with paper towels to ensure the skin gets nice and crispy.

    Place the potatoes, carrots, and onions in a large roasting pan and toss them with half of the olive oil, salt, and pepper.

    Rub the remaining olive oil, garlic, rosemary, salt, and pepper all over the chicken, including under the skin if you can.

    Place the chicken on top of the vegetables in the pan and tuck the lemon halves inside the chicken cavity.

    Roast for about 60 to 75 minutes, or until the juices run clear and the chicken reaches an internal temperature of 165 degrees.

    Let the chicken rest for 15 minutes before carving so the juices stay inside the meat.

    Serve the chicken alongside the tender roasted vegetables.

💡 Tips

Store any leftover chicken in an airtight container in the fridge for up to three days. You can use the leftover bones to make a wonderful homemade chicken stock later in the week.
