If you love the fresh crunch of cowboy caviar, you are going to adore this pasta version. It takes all those favorite ingredients like black beans, corn, and peppers and tosses them with tender pasta for a meal that hits the spot every time.

I love making this for summer cookouts because it stays fresh in the fridge and actually tastes even better after the flavors have a chance to mingle for an hour. It is a real crowd pleaser that feels light yet filling enough for a main dish.

🧺 Ingredients

  • 16 ounces rotini or bowtie pasta
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions until it is al dente.

    Drain the pasta and rinse it under cold water to stop the cooking process, then set it aside to drain completely.

    In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, chili powder, cumin, salt, and pepper to make your dressing.

    In a large mixing bowl, combine the cooled pasta with the black beans, corn, bell peppers, red onion, jalapeño, and fresh cilantro.
