I have been making these for over eight years now and I still love them just as much as the first time. They are so bright and cheerful that they make any meal feel special, and they keep you full for a long time.

If you want to save time, you can use a rotisserie chicken from the store. Just shred it up and you are ready to assemble your wraps in just a few minutes.

๐Ÿงบ Ingredients

  • 2 cups shredded cooked chicken
  • 4 large flour tortillas
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, cut into thin strips
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup sliced green onions
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons warm water

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Stir the peanut butter, soy sauce, honey, lime juice, and ginger together in a small bowl until the mixture is very smooth.

  2. 2

Add the warm water one spoonful at a time and whisk until the sauce is thin enough to drizzle easily.

  3. 3

Lay the tortillas out flat on your workspace.

  4. 4

Place a handful of shredded chicken in the center of each tortilla.

  5. 5

Layer the cabbage, carrots, bell pepper, cilantro, and green onions on top of the chicken.

  6. 6

Drizzle a good amount of the peanut sauce over the fillings in each wrap.

  7. 7

Fold the left and right sides of the tortilla inward then roll from the bottom up to make a tight wrap.

  8. 8

Slice each wrap in half and serve with any extra peanut sauce on the side for dipping.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. If you want to make these ahead of time, keep the sauce in a separate small jar so the tortillas do not get soggy.
