Italian wedding soup is one of those dishes that feels like a warm hug in a bowl. It is a family favorite around my kitchen because it hits the perfect balance of light, healthy greens and satisfying, hearty meatballs.

I love to keep a batch of this in the freezer for busy nights when I need something nourishing on the table fast. If you have any leftovers, the acini di pepe pasta tends to soak up the broth as it sits in the fridge, so just add a splash of extra stock when you reheat it to keep everything perfectly saucy.

๐Ÿงบ Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg, beaten
  • 2 tablespoons fresh parsley, chopped
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 2 carrots, diced
  • 2 stalks celery, sliced
  • 4 cups fresh baby spinach
  • Salt and pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a mixing bowl, combine the ground chicken, breadcrumbs, parmesan cheese, egg, parsley, salt, and pepper.

  2. 2

Roll the mixture into small, bite sized meatballs and set them aside on a plate.

  3. 3

Bring the chicken broth to a gentle boil in a large pot over medium heat.

  4. 4

Add the carrots and celery to the broth and cook for about five minutes until they begin to soften.

  5. 5

Drop the meatballs into the simmering broth one by one, letting them cook for about ten minutes.

  6. 6

Stir in the dry pasta and continue simmering for another ten minutes until the pasta is tender.

  7. 7

Toss in the fresh baby spinach at the very end and stir just until the leaves wilt.

  8. 8

Taste your soup and add extra salt or pepper if needed before serving warm.

๐Ÿ’ก Tips

Store any leftover soup in an airtight container in the refrigerator for up to three days. If the pasta absorbs too much liquid, simply add a bit more chicken stock when you heat it up on the stove. This soup also freezes very well for up to two months.
