There is nothing quite like a big pot of soup simmering on the stove on a chilly evening. This Italian sausage orzo soup is one of my favorite go to meals because it is so satisfying and simple to put together. The tiny orzo pasta cooks up perfectly in the broth, making every spoonful delicious.

My best tip for this recipe is to brown the sausage really well before adding the vegetables. Getting those little crispy bits at the bottom of the pot adds so much depth to the flavor of the final soup.

🧺 Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes, 14 ounces
  • 1 cup dry orzo pasta
  • 2 cups fresh spinach
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

    Heat the olive oil in a large pot over medium heat and add the sausage. Break it apart with a wooden spoon and cook until it is nicely browned.

    Add the onion, carrots, and celery to the pot. Sauté the vegetables for about 5 minutes until they begin to soften.

    Stir in the garlic and cook for another minute until it smells fragrant.

    Pour in the chicken broth and the diced tomatoes. Bring the mixture to a gentle boil.

    Stir in the orzo and the dried oregano. Reduce the heat and let the soup simmer for about 10 minutes or until the pasta is tender.

    Turn off the heat and stir in the fresh spinach. The heat from the soup will wilt the leaves perfectly.

    Season with salt and pepper to your liking and serve with a generous sprinkle of Parmesan cheese.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the orzo will soak up the broth over time, so you might need to add a splash of extra water or broth when you reheat it.
