There is nothing quite like a good turkey salad to make the most of Thanksgiving leftovers. It is one of my favorite ways to enjoy that extra roast turkey because it transforms simple meat into a light lunch that tastes brand new.

My biggest tip for this recipe is to make sure you chop your celery and nuts into small, uniform pieces. This ensures you get a perfect crunch in every single bite. It stores well in the fridge for a few days, so it is great for quick lunches during the week.

๐Ÿงบ Ingredients

  • 2 cups cooked turkey, shredded or chopped
  • 1/2 cup celery, diced
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, toasted and chopped
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place the cooked turkey in a large mixing bowl.

  2. 2

Add the diced celery, dried cranberries, and chopped pecans to the bowl.

  3. 3

In a small separate bowl, whisk together the mayonnaise, lemon juice, garlic powder, salt, and pepper.

  4. 4

Pour the dressing over the turkey mixture and toss everything together until well coated.

  5. 5

Taste the salad and add a little more salt or pepper if you prefer.

  6. 6

Serve it immediately or cover it and keep it in the fridge until you are ready to eat.

๐Ÿ’ก Tips

This salad is wonderful served on top of a bed of fresh greens or piled high on a buttery croissant. If you plan to store it, keep it in an airtight container in the refrigerator for up to three days.
