There is nothing quite like a big bowl of cheeseburger soup on a chilly evening. It is creamy, hearty, and packed with everything you love about a classic burger, from the savory ground beef to the tender potatoes.

My grandkids always ask for seconds when this is on the stove. If you want to make it extra special, top your bowl with some crispy bacon bits or a little extra shredded cheddar cheese right before you dig in.

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cups baby gold potatoes, diced
  • 3 cups chicken broth
  • 1 cup shredded carrots
  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
