This creamy potato soup is my go to meal whenever the weather gets a little chilly outside. It is hearty enough to satisfy the whole family, and the mix of potatoes gives it such a wonderful texture in every spoonful.

I love to serve this with a side of crusty bread for dipping. For the best results, try to shred your own cheese from a block because it melts so much smoother than the pre shredded bags from the store.

  • 4 strips of bacon, diced
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons all purpose flour
  • Salt and black pepper to taste
  • Fresh chives for garnish

    Cook the diced bacon in a large pot over medium heat until it is nice and crispy.

    Remove the bacon with a slotted spoon and set it aside, but leave about a tablespoon of the bacon fat in the pot.

    Sprinkle the flour over the onions and stir well for a minute to cook off the raw flour taste.

    Pour in the broth and add the potatoes, then bring the mixture to a boil.
