There is nothing quite like a big bowl of creamy chicken gnocchi soup when you want something warm and filling. It is the perfect comfort food for chilly evenings and it comes together so quickly in just one pot.

My favorite thing about this recipe is how hearty it feels with the tender potato dumplings and fresh spinach. If you want a little extra flavor, a pinch of red pepper flakes adds a nice touch of warmth.

๐Ÿงบ Ingredients

  • 2 tablespoons butter
  • 1 cup diced onion
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked shredded chicken
  • 1 pound potato gnocchi
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Melt the butter in a large pot over medium heat.

  2. 2

Add the onion and carrots, cooking them until they are soft, which takes about five minutes.

  3. 3

Stir in the minced garlic and cook for one minute until fragrant.

  4. 4

Sprinkle the flour over the vegetables and stir well to coat.

  5. 5

Slowly pour in the chicken broth while whisking to ensure there are no lumps.

  6. 6

Bring the mixture to a simmer and let it thicken slightly.

  7. 7

Stir in the shredded chicken and the potato gnocchi.

  8. 8

Cook for three to five minutes, or until the gnocchi float to the top.

  9. 9

Pour in the heavy cream and add the fresh spinach, stirring until the spinach wilts.

  10. 10

Season with salt and pepper to taste and serve immediately.

๐Ÿ’ก Tips

Store your leftovers in an airtight container in the fridge for up to three days. Keep in mind that the gnocchi may soak up some of the broth, so you might want to add a splash of water or extra broth when you reheat it. This soup pairs beautifully with a side of warm crusty bread.
