There is nothing quite like coming home to the smell of a warm, homemade soup waiting for you in the slow cooker. This chicken and wild rice soup is a favorite in my house because it is filling, healthy, and so easy to put together before you start your day.

My best tip for this recipe is to rinse your wild rice well before adding it to the pot. It helps the texture stay perfect while it cooks alongside the tender chicken and fresh vegetables.

  • 1 pound boneless skinless chicken breasts
  • 1 cup uncooked wild rice blend
  • 4 cups chicken broth
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream or half and half
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour

    Place the chicken breasts, uncooked rice, carrots, celery, onion, thyme, garlic powder, salt, and pepper into your crockpot.

    Pour the chicken broth over the top of the ingredients.

    Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the rice is tender and the chicken is cooked through.

    Remove the chicken from the pot and shred it using two forks.

    In a small bowl, whisk together the melted butter and flour to create a paste. Stir this into the slow cooker to help thicken the soup.

    Stir in the shredded chicken and the heavy cream.

    Cover and let the soup cook for another 15 minutes until it is nice and hot, then serve.

This soup keeps well in the fridge for up to three days in an airtight container. If the soup thickens too much after cooling, just add a splash of extra broth when you reheat it on the stove.
