I love how the warm spices from the curry powder brighten up the sweetness of the potatoes. It is a hearty, nourishing meal that feels like a big hug in a bowl, and it happens to be entirely vegan and gluten free.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 pounds sweet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 tablespoon mild curry powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can coconut milk, full fat
