If you love jalapeño poppers, you are going to adore this chicken salad. It is the perfect way to turn those bold flavors into a filling meal that works great for lunch or a quick dinner on a busy night.

I like to serve this with crunchy crackers or tucked inside a lettuce wrap. It keeps well in the fridge for a few days, so it is a wonderful option for your weekly meal prep.

🧺 Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 strips bacon, cooked and crumbled
  • 2 fresh jalapeño peppers, seeded and finely diced
  • 1/2 cup mayonnaise
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste

👩‍🍳Instructions

  1. 1

In a large mixing bowl, stir together the softened cream cheese and mayonnaise until smooth.

  2. 2

Add the garlic powder, onion powder, salt, and pepper to the dressing and mix well.

  3. 3

Fold in the shredded chicken, diced jalapeños, shredded cheddar cheese, and most of the crumbled bacon.

  4. 4

Give everything a good stir until the chicken is evenly coated.

  5. 5

Taste and add extra salt or pepper if you think it needs it.

  6. 6

Serve immediately or cover and chill in the refrigerator for at least one hour to let the flavors meld together.

💡 Tips

Store this salad in an airtight container in the fridge for up to three days. If you like extra heat, leave some of the seeds in the jalapeños when you chop them. Serve it with celery sticks for a crunchy and low carb option.
