There is nothing better than a warm bowl of soup when the weather starts to cool down. This pumpkin soup is a favorite in my kitchen because it uses canned pumpkin puree, which saves so much time compared to roasting and peeling a fresh pumpkin.

My best tip for this recipe is to use a good quality vegetable or chicken stock since that is the base of your flavor. If you want an extra silky texture, use an immersion blender right in the pot to smooth out any small lumps before you add the cream.

  • 2 cups canned pumpkin puree
  • 3 cups vegetable or chicken stock
  • 1 cup heavy cream
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced

  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
