This roasted red pepper soup is a favorite in my kitchen when the weather turns chilly. The combination of roasted peppers and tomatoes creates a beautiful color and a depth of flavor that feels very special, even though it is simple to make.

My secret to getting that perfect texture is to blend the soup until it is completely smooth before adding a splash of cream. If you want a little extra zing, stir in a teaspoon of balsamic vinegar right before you serve it.

๐Ÿงบ Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 jars (12 ounces each) roasted red peppers, drained
  • 1 can (14 ounces) diced tomatoes
  • 2 cups vegetable broth
  • 1/2 teaspoon dried basil
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the chopped onion and cook until it is soft and translucent, which should take about 5 minutes.

  3. 3

Stir in the minced garlic and cook for another minute until it is fragrant.

  4. 4

Add the roasted red peppers, diced tomatoes, vegetable broth, and dried basil to the pot.

  5. 5

Bring the mixture to a gentle boil, then turn the heat down and let it simmer for 15 minutes.

  6. 6

Use an immersion blender to process the soup directly in the pot until it is smooth and creamy.

  7. 7

Stir in the heavy cream and season with salt and pepper to your liking.

  8. 8

Heat through for another minute and serve warm.

๐Ÿ’ก Tips

Serve this soup with a piece of crusty bread or a grilled cheese sandwich for a complete meal. You can store any leftovers in an airtight container in the fridge for up to three days. If you prefer a lighter version, you can swap the heavy cream for coconut milk or just leave it out entirely.
