There is nothing quite like a big pot of soup when you want something cozy for dinner. This sausage and gnocchi soup is a favorite at my house because it is hearty enough to fill everyone up but quick enough to make on a busy weeknight.

My best tip for this recipe is to make sure you brown your sausage well before adding the liquids. Getting that nice golden color on the meat adds so much depth to the base of the soup.

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste

    Heat the olive oil in a large pot over medium heat.

    Add the sausage and cook until it is browned and cooked through, breaking it into small pieces with a wooden spoon.

    Stir in the garlic and cook for about one minute until it smells fragrant.

    Pour in the chicken broth and bring the mixture to a gentle simmer.

This soup tastes even better the next day after the flavors have had time to meld together in the fridge. If you have leftovers, keep them in an airtight container for up to three days. You might need to add a splash of extra broth when reheating because the gnocchi will soak up some of the liquid.
