There is nothing better than a big bowl of this soup on a chilly evening. It is the kind of meal that warms you right up from the inside out and always leaves everyone asking for seconds at my table.

I love how the Italian sausage adds so much flavor to the broth without needing a long list of extra spices. If you want a little more color, stir in a handful of fresh baby spinach right at the end until it just wilts.

  • 1 pound Italian sausage
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large russet potatoes, peeled and cubed
  • 2 cups half and half
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley for garnish

    Brown the Italian sausage in a large pot over medium heat until it is cooked through, breaking it into small pieces with your spoon.
