There is nothing quite like a big bowl of this creamy sausage gnocchi soup to warm you up on a chilly evening. It is packed with flavor from the Italian sausage, and those little pillowy gnocchi pieces are just perfect for soaking up all that delicious broth.

I really love how simple this meal is to pull together on a busy weeknight. If you want to keep the broth light, you can easily swap the cream for milk, but I find a splash of heavy cream makes the texture extra comforting and velvety.

๐Ÿงบ Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 1 teaspoon Italian herb mix
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 3 tablespoons all purpose flour
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1 pound fresh gnocchi
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large pot over high heat.

  2. 2

Add the sausage meat and cook while breaking it into small pieces until browned, then remove the meat with a slotted spoon and set aside.

  3. 3

In the same pot, add the onion and garlic and cook for 2 minutes.

  4. 4

Add the celery, carrots, Italian herbs, and red pepper flakes, cooking for another 2 minutes.

  5. 5

Pour in the white wine and simmer rapidly, scraping the bottom of the pot until the liquid has mostly evaporated.

  6. 6

Stir in the flour and cook for a minute until the vegetables are coated.

  7. 7

Slowly pour in the chicken stock while stirring to dissolve the flour, then return the sausage to the pot.

  8. 8

Bring the soup to a simmer for 5 minutes, then stir in the cream and continue to simmer for another 5 minutes.

  9. 9

Add the gnocchi and cook for about 2 to 3 minutes until they float to the surface.

  10. 10

Stir in the baby spinach and Parmesan cheese until the leaves have wilted, then season with salt and pepper to taste.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a splash of water or extra broth as the gnocchi will continue to soak up liquid and thicken the soup while it sits.
