Creamy Southwest Crockpot Corn Chowder
This hearty, comforting corn chowder is packed with smoky flavors and gets perfectly creamy right in your slow cooker.
recipesbynani.comThere is nothing better than coming home to the smell of this Southwest corn chowder waiting for you. It is one of my favorite recipes because it is so easy to toss everything into the slow cooker and let it do the hard work for you. The combination of fire roasted corn, tender chicken, and black beans makes for a really filling meal that the whole family will enjoy.
My top tip for this recipe is to use a good quality shredded cheddar cheese and stir it in right at the end. If you want a little extra kick, add a pinch of cayenne pepper or a chopped jalapeno before cooking. It really brings all those beautiful Southwest flavors together.
