Creamy Southwest Crockpot Corn Chowder

It is one of my favorite recipes because it is so easy to toss everything into the slow cooker and let it do the hard work for you. The combination of fire roasted corn, tender chicken, and black beans makes for a really filling meal that the whole family will enjoy.
My top tip for this recipe is to use a good quality shredded cheddar cheese and stir it in right at the end. If you want a little extra kick, add a pinch of cayenne pepper or a chopped jalapeno before cooking. It really brings all those beautiful Southwest flavors together.

- 15 ounces fire roasted corn, drained
- 15 ounces black beans, rinsed and drained
- 1 cup diced onion
- 1 cup diced red bell pepper
- 2 cups chicken broth

- 1 teaspoon chili powder
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- Salt and pepper to taste
