There is nothing quite like a big bowl of soup when you want something warm and filling. This Tuscan soup is a personal favorite in my kitchen because the combination of savory Italian sausage and creamy broth feels like a warm hug in a bowl.

My best tip for this recipe is to use good quality sun dried tomatoes packed in oil. The oil adds so much extra flavor to the base of the soup, and it really makes the whole dish come together beautifully.

  • 6 slices thick cut bacon, chopped
  • 1 pound Italian sausage, casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, chopped

  • 1 can white cannellini beans, drained and rinsed
  • 1 cup heavy cream
  • 2 cups fresh kale, chopped
  • Salt and black pepper to taste
  • Optional: grated Parmesan cheese for topping
