Creamy Zuppa Toscana Soup

My best tip for this recipe is to slice your potatoes into uniform pieces. If they are all about the same size, they will finish cooking at the same time and give the soup a perfect texture. Feel free to add an extra sprinkle of parmesan cheese right before you serve it.

- 1 pound Italian sausage
- 4 slices bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 large Russet potatoes, sliced into thin rounds
- 1 bunch kale, stems removed and leaves chopped
- 1 cup heavy cream
- Salt and black pepper to taste
- Red pepper flakes for serving

Brown the sausage in a large pot or Dutch oven over medium heat until cooked through. Remove the sausage with a slotted spoon and set it aside.

In the same pot, cook the chopped bacon until crispy. Add the diced onion and cook until soft.

Pour in the chicken broth and add the sliced potatoes. Bring the liquid to a boil and simmer until the potatoes are tender.
