Easy Slow Cooker Pepper Steak

My biggest tip for this recipe is to make sure you slice your steak against the grain. This helps the beef stay nice and tender as it slow cooks. If you have extra time, you can quickly sear the steak in a pan before adding it to the slow cooker for even more flavor.
🧺 Ingredients
- 1.5 pounds round steak, sliced into thin strips
- 2 large bell peppers, cut into strips
- 1 large yellow onion, sliced
- 2 cloves garlic, minced
- 1/2 cup soy sauce
- 1/2 cup beef broth
- 1 tablespoon brown sugar
- 1 teaspoon ground ginger
- 2 tablespoons cornstarch
- 2 tablespoons water
- Hot cooked rice for serving

Place the sliced steak, bell peppers, onion, and garlic into your slow cooker.

In a small bowl, whisk together the soy sauce, beef broth, brown sugar, and ginger.

Pour the sauce mixture over the ingredients in the slow cooker and stir gently to combine.

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

In a small cup, mix the cornstarch and water until smooth. Stir this into the slow cooker during the last 20 minutes of cooking to thicken the sauce.

Serve the steak and vegetables hot over a bed of fluffy rice.
💡 Tips
Leftovers keep very well in the fridge for up to three days in an airtight container. If you want to add extra crunch, stir in some fresh snap peas during the final ten minutes of cooking. This dish pairs perfectly with a side of steamed broccoli or a crisp green salad.
