If you love the taste of classic cabbage rolls but dread the time it takes to assemble them, this soup is exactly what you need. It brings together hearty ground beef, tender cabbage, and a savory tomato broth to create the ultimate cozy meal.

This recipe is a staple in my kitchen because it is so simple to prepare. You just brown the meat, toss everything into the slow cooker, and let it do all the hard work for you while your house fills with a delicious aroma.

๐Ÿงบ Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 cup shredded carrots
  • 4 cups beef broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place a large skillet over medium heat and add the ground beef. Cook and crumble until it is browned, then add the onion and garlic. Continue cooking until the onion softens.

  2. 2

Transfer the beef mixture into a 6 quart slow cooker.

  3. 3

Add the cabbage, carrots, beef broth, crushed tomatoes, diced tomatoes, brown sugar, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir well to combine all ingredients.

  4. 4

Cover the slow cooker and cook on LOW for 6 hours or on HIGH for 3 hours.

  5. 5

Just before serving, stir in the cooked white rice. Taste the soup and add extra salt or pepper if you think it needs it.

๐Ÿ’ก Tips

You can keep leftovers in an airtight container in the fridge for up to 4 days or freeze them for up to 3 months. Always wait to stir in the rice until you are ready to serve so it keeps its texture and does not turn mushy.
