Easy Tuna Sushi Stacks
These quick sushi stacks give you all the fresh flavor of a restaurant roll without any of the complicated rolling.
recipesbynani.comWhen I am craving sushi but do not want to spend an hour in the kitchen rolling seaweed, I make these tuna stacks. They look beautiful on the plate and taste just like the fresh rolls you get at your favorite local spot.
My secret for the best result is using a small measuring cup to pack your ingredients. This helps keep the shape perfect when you flip it onto your plate.

- 2 cups cooked sushi rice
- 1 pound sushi grade tuna, finely diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 ripe avocado, diced
- 1/2 cucumber, finely diced
- 2 tablespoons spicy mayonnaise
- 1 tablespoon toasted sesame seeds
- 2 green onions, thinly sliced

In a medium bowl, gently toss the diced tuna with the soy sauce and sesame oil.

Grease the inside of a one cup measuring cup with a little bit of oil so the rice does not stick.

Pack a layer of cooked sushi rice into the bottom of the measuring cup.

Add a layer of diced cucumber over the rice, followed by a layer of avocado.

Finish by adding a generous layer of the seasoned tuna on top, pressing down firmly with the back of a spoon to pack everything together.

Place a serving plate upside down over the measuring cup, then quickly flip the plate and cup over together.

Gently lift the measuring cup to reveal your beautiful stack.

Drizzle with spicy mayonnaise and garnish with toasted sesame seeds and sliced green onions.

These stacks are best eaten right away while the fish is cold and the rice is fresh. If you have leftovers, keep the tuna in an airtight container in the fridge for no more than one day, though I highly recommend enjoying them fresh.
