There is nothing better than a fresh wrap when you are looking for something healthy and filling. These black bean wraps have become a favorite in my kitchen because they come together in minutes and satisfy everyone at the table.

The secret is the creamy cilantro lime dressing. It ties the earthiness of the beans and the richness of the avocado together perfectly. I love to prep these ahead of time for a busy weekday lunch.

  • 2 cans of black beans, rinsed and drained
  • 4 large flour tortillas
  • 2 ripe avocados, sliced
  • 1 cup shredded romaine lettuce
  • 1/2 cup corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

    In a small bowl, whisk together the sour cream, lime juice, garlic powder, and cilantro to make the dressing.
