There is nothing quite like a big bowl of pasta salad for a summer lunch or a quick dinner side. Everyone in my family loves this one because it is packed with fresh veggies and that wonderful salty feta cheese we all crave.

My top tip is to make this about an hour before you want to eat. It gives the dressing time to soak into the pasta and helps all those lovely vegetable flavors mingle together beautifully.

  • 1 pound rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, chopped
  • 1 small red onion, thinly sliced
  • 1/2 cup pitted kalamata olives, sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper to taste

    Bring a large pot of salted water to a boil and cook your pasta according to the package directions until it is tender.

    Drain the pasta and rinse it under cold water to stop the cooking process, then set it aside to drain completely.

    In a large bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper to create your dressing.

    Add the cooked pasta, tomatoes, cucumber, onion, and olives to the bowl with the dressing.

Store any leftovers in an airtight container in the fridge for up to three days. If the pasta seems a bit dry the next day, just add a small splash of olive oil and a pinch of salt to wake up the flavors before serving.
