There is nothing quite like a homemade fish sandwich to make lunch feel a little extra special. The contrast between the crunchy fish and the smooth avocado on a soft toasted bun is always a hit with my family.

My secret for the best results is to make sure your fish is patted very dry before you cook it. This helps the breading stick perfectly and ensures the outside gets nice and golden without making the inside soggy.

๐Ÿงบ Ingredients

  • 2 white fish fillets like cod or tilapia
  • 1/2 cup all purpose flour
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • 2 brioche buns
  • 1 ripe avocado, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Pat the fish fillets dry with a paper towel and season them lightly with salt and pepper.

  2. 2

Set up three shallow bowls. Put the flour in the first, the beaten egg in the second, and the panko breadcrumbs in the third.

  3. 3

Dredge each fillet in the flour, dip it into the egg, and then press it firmly into the panko until evenly coated.

  4. 4

Heat the vegetable oil in a large skillet over medium heat.

  5. 5

Fry the fish for about 3 to 4 minutes per side until the coating is golden brown and the fish flakes easily with a fork.

  6. 6

While the fish cooks, stir together the mayonnaise and lemon juice in a small bowl.

  7. 7

Toast your brioche buns until they are lightly golden.

  8. 8

Spread the lemon sauce on the buns, place the crispy fish on top, and add the avocado slices before closing the sandwiches.

๐Ÿ’ก Tips

Serve these sandwiches immediately while the fish is hot and crispy. If you want to store leftovers, keep the fish and buns separate so the bread does not get soft. You can also add a leaf of butter lettuce for an extra crunch.
