There is nothing better than the smell of pumpkin spices filling the kitchen on a crisp morning. These bagels are a regular favorite in my house because they are satisfying, packed with protein, and have that classic chewy texture we all love.

My best tip for success is to make sure your Greek yogurt is nice and thick. If your yogurt is a bit watery, just strain it for a few minutes before mixing it into the dough. It makes a world of difference for the texture.

🧺 Ingredients

  • 2 cups self rising flour
  • 1 cup plain Greek yogurt
  • 1/2 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 egg, beaten for egg wash
  • Optional: 1/4 cup dried cranberries or raisins

👩‍🍳Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large bowl, combine the flour, pumpkin puree, Greek yogurt, and spices. Mix until a dough starts to form.

  3. 3

Turn the dough out onto a floured surface and knead it gently until smooth. If you are using dried fruit, fold it in during this step.

  4. 4

Divide the dough into four equal pieces and roll each into a rope. Join the ends together to form a circle.

  5. 5

Place the bagels on your prepared baking sheet and brush the tops with the beaten egg.

  6. 6

Bake for 20 to 25 minutes until the bagels are golden brown and sound hollow when tapped.

  7. 7

Let them cool slightly on a wire rack before slicing.

💡 Tips

These bagels store perfectly in an airtight container for up to three days. You can also toast them lightly before eating to bring back that fresh oven warmth. Try serving yours with a little bit of butter or cream cheese.
