I love this recipe because it makes healthy eating feel so simple. It is one of those dishes that works perfectly for a meatless Monday or as a side dish, and it is filling enough that even the pickiest eaters seem to enjoy it.

My top tip for this one is to cook your quinoa in vegetable broth instead of water. It adds a lovely depth of flavor that really makes the whole casserole pop.

🧺 Ingredients

  • 2 cups cooked quinoa
  • 3 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a medium baking dish.

    Steam the broccoli florets until they are bright green and just tender, then set them aside.

    In a skillet, sauté the diced onion in olive oil until it is soft and translucent.

    In a large mixing bowl, combine the cooked quinoa, steamed broccoli, sautéed onion, Greek yogurt, eggs, garlic powder, salt, and pepper.

    Fold in half of the shredded cheese and pour the mixture into your prepared baking dish.

    Top the casserole with the remaining cheese and bake for 20 to 25 minutes until the center is set and the cheese is melted and golden.

💡 Tips

You can store leftovers in an airtight container in the fridge for up to 3 days. This casserole also freezes well if you want to save a portion for a busy weeknight later on.
