There is something so special about a big pot of Italian Wedding Soup simmering on the stove. It is a classic comfort dish that brings everyone together with its savory broth and tender bites of meat and vegetables.

My favorite thing about this recipe is how it fills the kitchen with such a welcoming aroma. If you have any leftovers, the flavors actually get even better the next day, so it makes for a perfect lunch throughout the week.

๐Ÿงบ Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 8 cups chicken broth
  • 1 cup small pasta like acini de pepe or orzo
  • 4 cups fresh spinach, chopped
  • 2 large carrots, sliced
  • 1 small onion, diced
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, parsley, salt, and pepper until well mixed.

  2. 2

Shape the meat mixture into small bite sized meatballs and set them aside on a plate.

  3. 3

In a large soup pot, bring the chicken broth to a gentle boil over medium heat.

  4. 4

Add the sliced carrots and diced onion to the broth and cook for about five minutes until they soften.

  5. 5

Carefully drop the meatballs into the boiling broth and let them cook for about ten minutes.

  6. 6

Stir in the pasta and cook for another eight minutes or until the pasta is tender.

  7. 7

Add the chopped spinach to the pot and cook for just a minute or two until it wilts.

  8. 8

Taste your soup and add more salt or pepper if you think it needs it before serving warm.

๐Ÿ’ก Tips

Serve this soup with a side of crusty bread for dipping. If you want to store leftovers, keep the pasta separate if possible because it can soak up the broth while sitting in the fridge.
