If you are looking for a way to use your sourdough discard, these pizza pockets are a total winner. They are essentially homemade hot pockets that taste so much better than the store version, with a golden crust that is perfectly chewy and delicious.

I love keeping these on hand because they are quick to assemble once the dough has risen. Whether you need an easy after school snack for the kids or a simple lunch to pack for work, these pockets never disappoint. Just remember to let your filling cool slightly before stuffing the dough to keep everything sealed tight while baking.

๐Ÿงบ Ingredients

  • 1 batch sourdough pizza dough
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup pepperoni slices
  • 2 tablespoons melted butter
  • 1 teaspoon garlic paste
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped fresh basil

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

Roll out your prepared sourdough pizza dough on a lightly floured surface and cut it into equal rectangles.

  3. 3

Place a spoonful of pizza sauce in the center of each dough rectangle, then top with a small handful of mozzarella cheese and a few pepperoni slices.

  4. 4

Fold the dough over the filling and press the edges firmly with a fork to create a tight seal, making sure no filling can leak out.

  5. 5

Place the pockets on your prepared baking sheet and bake for 15 to 20 minutes until they are golden brown.

  6. 6

While they bake, mix the melted butter, garlic paste, parmesan cheese, and basil in a small bowl.

  7. 7

Brush the garlic butter mixture over the hot pizza pockets as soon as they come out of the oven and serve warm.

๐Ÿ’ก Tips

Store your leftovers in an airtight container in the fridge for up to 4 days, or freeze them individually wrapped for up to 2 months. To reheat from frozen, just pop them in an oven preheated to 350 degrees Fahrenheit for about 10 to 15 minutes until they are heated through.
