Homestyle Chicken Pho

recipesbynani.comThere is nothing quite like a big bowl of chicken pho to soothe the soul after a long day. It is one of my favorite meals because it tastes like you spent all day in the kitchen, but it actually comes together quite easily with just a few simple steps.
To get the best flavor, make sure you toast your ginger and onion until they are nice and charred. It adds a lovely smoky depth to the broth that makes all the difference.

- 1 whole chicken
- 1 large yellow onion, halved
- 3 inches fresh ginger, sliced lengthwise
- 4 star anise
- 1 cinnamon stick
- 1 tablespoon coriander seeds
- 1 tablespoon salt
- 1 tablespoon fish sauce
- 1 pound flat rice noodles
- 1 cup fresh cilantro, chopped
- 1 cup fresh Thai basil
- 2 cups bean sprouts
- 1 lime, cut into wedges
- 2 fresh red chilies, sliced

Place the chicken, onion, and ginger in a large pot with enough water to cover everything by two inches.

Bring the pot to a boil, then skim off any foam that rises to the top to keep your broth clear.

Add the star anise, cinnamon, coriander seeds, salt, and fish sauce. Reduce the heat and simmer for about one hour until the chicken is cooked through.

Remove the chicken from the pot, let it cool, and shred the meat into bite sized pieces. Strain the broth through a fine mesh sieve and discard the solids.

Cook the rice noodles according to the package directions, then divide them into serving bowls.

Top the noodles with shredded chicken and ladle the hot broth over the top.

Serve immediately with fresh herbs, bean sprouts, lime wedges, and chili slices on the side so everyone can customize their own bowl.

Store any leftover broth and noodles separately in the fridge for up to three days to keep the noodles from getting mushy. If you like it extra spicy, add a generous spoonful of chili oil or hoisin sauce right before eating.
