There is nothing quite like a well made sandwich for lunch. This ciabatta recipe is my go to when I want something satisfying that feels a little bit special.

My secret is to toast the bread just enough so it has a nice crunch but stays soft in the middle. You can really use any deli meat you enjoy, so feel free to raid the fridge and make it your own.

  • 1 fresh ciabatta loaf or roll
  • 4 ounces sliced deli turkey or ham
  • 2 slices provolone cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 handful fresh arugula or lettuce
  • 1 tablespoon olive oil

    In a small bowl, stir the sliced onions with the vinegar and sugar. Let them sit for ten minutes to soften and pickle slightly.

    Slice your ciabatta bread in half lengthwise and lightly toast the cut sides in a pan or toaster.

    Mix the mayonnaise and mustard together, then spread this mixture generously on both sides of the bread.

    Layer the deli meat and provolone cheese onto the bottom half of the bread.

    Drizzle the olive oil over the arugula and pile it on top of the cheese along with the drained pickled onions.

    Close the sandwich, cut it in half, and serve it right away while the bread is fresh.

If you are packing this for a picnic, keep the dressing and pickled onions in a separate small container to add right before you eat so the bread stays perfectly crisp.
