Pastina soup is a classic dish that most of us grew up eating whenever we felt a little under the weather or just needed something light. It is incredibly simple to make, relying on tiny star shaped pasta and a clear, flavorful broth that warms you from the inside out.

My favorite thing about this recipe is how quickly it comes together on a busy weeknight. If you want to make it extra special, feel free to stir in a little bit of freshly grated parmesan cheese right before you serve it.

  • 6 cups chicken or vegetable broth
  • 1 cup pastina pasta
  • 1 cup carrots, finely diced
  • 1 cup celery, finely diced
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste
  • Freshly grated parmesan cheese for serving
