There is nothing quite like a big bowl of chopped chicken salad for a satisfying lunch. It is one of my go to recipes whenever I have leftover cooked chicken in the fridge because it comes together so fast and keeps everyone happy.

My biggest tip for this salad is to chop your vegetables into small, uniform pieces. This ensures you get a little bit of everything in every single bite, which really makes the texture special.

๐Ÿงบ Ingredients

  • 2 cups cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 1 head romaine lettuce, finely chopped
  • 1 cup cherry tomatoes, quartered
  • 1 cucumber, diced
  • 1/2 red onion, finely diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, parsley, salt, and pepper to make your dressing.

  2. 2

Place the chopped romaine lettuce into a large serving bowl.

  3. 3

Add the diced chicken, crumbled bacon, cherry tomatoes, cucumber, and red onion on top of the lettuce.

  4. 4

Pour the dressing over the salad ingredients.

  5. 5

Toss everything together gently until the salad is evenly coated and serve immediately.

๐Ÿ’ก Tips

Store the dressing separately from the salad greens if you plan to eat this over a few days so the lettuce stays crisp. You can also add some avocado right before serving for extra creaminess.
