There is something so special about a chopped sandwich. By finely dicing the meats, cheese, and crisp veggies, you make sure that you get a bit of everything in every mouthful. It takes the mess out of eating a big sub and makes the flavors pop.

My biggest tip is to let the mixture sit in the dressing for about ten minutes before you load it into the bread. This gives the vinegar and oil a chance to soften the onions and peppers just enough to make them extra tasty.

  • 1/4 pound salami, thinly sliced
  • 1/4 pound pepperoni, thinly sliced
  • 1/4 pound ham, thinly sliced
  • 4 slices provolone cheese
  • 1/2 cup shredded iceberg lettuce
  • 1/4 cup red onion, finely diced
  • 1/4 cup pepperoncini peppers, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 large hoagie roll or sub bun

    Layer the salami, pepperoni, ham, and provolone on a large cutting board.

    Use a sharp knife to chop all the meats and cheese together until they are in bite sized pieces.

    Add the shredded lettuce, diced onion, and chopped pepperoncini to the pile.

    Drizzle the vinegar, olive oil, and dried oregano over the top of the pile.

    Use your knife or a bench scraper to toss everything together until the dressing coats all the ingredients.

    Slice your hoagie roll open and scoop the mixture into the bread.

    Press the sandwich down slightly before serving to keep everything in place.

If you are taking this to work for lunch, keep the meat mixture in a separate container and add it to the bread right before you eat to prevent the roll from getting soggy. You can also add a smear of mayonnaise to the bread if you like a creamier finish.
