Nani's Favorite Fall Roasted Vegetable Soup
This cozy soup celebrates all the best flavors of the October harvest in one warm bowl.
recipesbynani.comOctober is my favorite time of year to head to the market. There is something so comforting about bringing home fresh pumpkins, crisp apples, and earthy brussels sprouts to fill the kitchen with wonderful smells.
This soup is one of my go to recipes when the air gets chilly. It is healthy, filling, and lets the seasonal vegetables really shine. Make sure to roast your veggies well because that little bit of caramelization makes all the difference in the flavor.

- 1 pound brussels sprouts, halved
- 2 large carrots, chopped
