Nani's Favorite Quinoa and Roasted Veggie Grain Bowl
This colorful and nourishing grain bowl is my go to lunch for busy work weeks.
recipesbynani.comWhen your week gets hectic, having a healthy lunch ready in the fridge makes all the difference. I love these grain bowls because they stay fresh for days and provide plenty of energy to get you through the afternoon slump.
My biggest tip is to roast your vegetables on Sunday evening while you listen to your favorite music. Store the dressing in a separate small container and add it right before you eat to keep the greens crisp and fresh.
