There is nothing quite like the taste of homemade ice cream made from scratch. This old fashioned recipe uses a classic custard base with tempered egg yolks, which gives it a beautiful, velvety texture that you just cannot get from store bought tubs.

It is a wonderful base for any flavor you love, but it is truly delicious all on its own. I recommend serving it alongside a warm fruit cobbler or a slice of cake for the perfect dessert.

🧺 Ingredients

  • 2 cups whole milk
  • 2 cups heavy cream
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract

👩‍🍳Instructions

  1. 1

Heat the milk and cream in a saucepan over medium low heat until it reaches a gentle simmer, but do not let it come to a boil.

  2. 2

In a separate mixing bowl, whisk the egg yolks and sugar together until the mixture is light, airy, and pale in color.

  3. 3

Slowly pour the hot milk mixture into the eggs while whisking constantly to temper them.

  4. 4

Return the entire mixture to the saucepan and cook over medium low heat, whisking constantly, until it reaches 165 to 170 degrees Fahrenheit.

  5. 5

Strain the custard through a fine mesh strainer to ensure it is perfectly smooth, then refrigerate for at least 3 hours until completely chilled.

  6. 6

Pour the chilled base into your ice cream maker and follow the manufacturer instructions for churning.

  7. 7

Serve immediately for soft serve consistency or transfer to a freezer safe container to firm up for a few hours.

💡 Tips

Store any leftovers in a freezer safe container with plastic wrap pressed directly against the surface of the ice cream to prevent ice crystals from forming. If you want to add fruit or chocolate chips, stir them into the machine during the final few minutes of churning.
